What is Barbecue? Smoking or Grilling? photoThis week, I would invite my friends to join in my barbecue party. Everything has been prepared, now just waiting my friends to come.

Actually it’s both. While the majority of Americans think of barbecue as the charcoal or propane grill on the backyard patio, the term barbecue has come to mean different things to different people. I wrote this article to help distinguish the differences and provide some guidelines to help you make a more informed decision on what to buy for the job you are trying to do.

The term barbecue basically falls into two main categories:

1) hot & fast and
2) low & slow

The hot and fast method is generally done over direct heat on a grill using charcoal or propane with temperatures that range between 300-500 degrees. This works great for steaks, chops, chicken, and fish, when you want to put a nice sear on the food and effectively seal in the juices. While the food will cook much quicker, you will have to watch it very closely so it doesn’t burn. It also will not pick up near as much smoky flavor. For the most part, this is a very simple and efficient way to cook; leaving you plenty of time for enjoying yourself with family and friends, and that is really what a barbecue is all about.

The other method is low and slow. This is typically done in a barbecue smoker which usually uses indirect heat and temperatures ranging between 200-275 degrees. If you’ve ever been to an authentic Kansas City, Memphis or Texas barbecue restaurant, this is the method used. Meats cooked this way spend anywhere from 2-15 hours over low heat with aromatic smoke from a variety of different wood types, including oak, hickory, pecan or cherry. When you slice into a slow smoked piece of meat you should see a pink “smoke ring” inside, which indicates that the meat was prepared in a smoker and spent a considerable amount of time there!

So the question you must ask yourself is, “what is my goal here? It depends on several factors, including the type of equipment you have, the amount of time you have, the type of food you plan to cook and the end result you are looking for. If you do not currently own a grill or smoker, you should know that you will spend anywhere from $50-$1500 on a grill and $200 – $10,000 on a smoker. While a smoker only burns wood and charcoal, a grill can be either gas or charcoal. One nice compromise for the average person is the Weber Kettle charcoal grill. This is a great product because it is relatively inexpensive and can work well as both a grill and smoker.

Looking for the Best BBQ Chicken Recipe? Look no Further! photoWhat is your favorite menu?? If you like a chicken, what kind of various way for cooking that chicken. If I could suggestion BBQ chicken is a popular and delicious meals which you must try.

BBQ chicken is one of the most popular meats ever enjoyed all over the world. Chicken is usually affordable, will fill you up, and is an excellent way to get protein. Whether you decide to cook it on the BBQ grill, smoker or just in the oven it is easy to cook, so anyone can make it. The problem is there are a lot of recipes out there and how do you know which are the good ones? Well there are some general ingredients that let you know it is going to be a good recipe that you and your guests will enjoy at your next BBQ.

Mustard, ketchup, garlic, sugar, Worcestershire sauce, cumin, cinnamon and sometimes beer are all ingredients to look out for if it is a traditional BBQ chicken you are after. If you want a more asian flavor to it look for ingredients like Hoisin sauce, soy sauce, honey, and ginger. BBQ chicken is about personal taste and there are a lot of recipes for it because it is a flexible dish. A good and easy recipe that you may want to try out is from Paula Deen and her show ‘Paula’s Home Cooking’. It is one that can be grilled or put in the oven and is called Deen’s Brothers BBQ Chicken. It is as follows:

Recipe: one whole chicken cut into 8 portions (chicken weight about three and a half pounds), orange juice – 2 tablespoons, Ketchup – 1 cup, liquid smoke – 1/4 teaspoon, dark brown sugar – 1/4 cup (packed), dry mustard powder – 1/2 teaspoon, cayenne pepper – 1/4 teaspoon, Worcestershire sauce – 1 teaspoon. Prepare the oven by preheating to 375F or the grill by using olive oil and brushing it with it. Place in a bowl all of the sauce ingredients (all of them apart from the chicken). Mix well so that they are all combined and then scoop out a third of a cup for basting. Take the chicken pieces and put them in the sauce and toss carefully until they are well coated. Cover the chicken pieces and put on the grill or place them in a roasting pan. Cook for a total of forty to forty five minutes (make sure they are cooked all the way through). After 20 minutes has passed of cooking time baste them with the remainder of the sauce you had set aside.

The chicken tastes great and it is a recipe anyone can follow, grilled or not. For those of you not used to cooking with liquid smoke this gives meat a smoked flavor and smell without having to actually smoke it. If you do not like smoked meat then just leave it out!

Although chicken is not an expensive meat, especially when you buy one whole, some people prefer not to have to cut up a whole chicken themselves. Therefore thighs are a great alternative, as they are cost effective taste good and cook in less time. This means you and your guests get to eat them quicker! Or look for a mixture of chicken parts, there are legs, wings and breasts too.
